Tulleeho : Both red and whites are good. Reds however contain more tannins, molecules that are supposed to be beneficial for health.

Ysp : What chemical reactions happen when wine is added in recipes? What chemical reactions take place when grape juice becomes wine? Are any carcinogens released ?
Tulleeho : When the grape juice becomes wine the main chemical reaction is the transformation of sugar into ethanol (alcoholic fermentation). Another is the transformation of malic acid into lactic acid (malo-lactic fermentation).
While cooking with wines, if heated, the alcohol evaporates and the proteins coagulate. There must be plenty of side reactions as well, but we're not too aware of those. Nothing carcinogen for sure, as long as you don't burn your dish to ashes!

Anoop Mahajan : How long does it take to convert grape into Champagne ? How long does each step take ?
Tulleeho : Harvest and first fermentation are fast (2 weeks).
The second fermentation (prise de mousse) lasts at least 14 months (imposed by law) but can take longer according to the quality policy of the house. At Veuve Clicquot this step takes three years.
The Riddling takes a couple of weeks.Then the champagne is normally stored for another 6 months before being released.

Neeta : Why are tannins present in red wine? Doese the presence of tannins leave a bitter aftertaste on the palate ?
Tulleeho : Tanins are present in the skins, seeds and stems of the grapes. During the red wine making process, the skins are left in contact with the juice in order to extract color and tanins (as opposed to the white wine making in which the grapes are pressed immediately after harvest and only the juice, without the skin is fermented). That is why red wines contains tanins, responsible for what is often described as "the body" of the wine.
The quality of tanins makes the quality of the red wines: if made from well ripened grapes, the tanins will ensure that the wine can age for a long time. It is their transformation during the ageing in the bottle which is reponsible for the evolution of the wine. Tanins are therefore the essential component of heavy red wines. Their bitterness becomes noticable if not properly balanced by the alcohol or if the grapes were not ripe enough.
